Yummy Fruit Enchiladas

Years ago Mr. and I were eating with some friends and she made the most amazing dessert. As we do around here, I asked for the recipe and she graciously gave it to me.  Fast forward a few years to yesterday and I happened upon a can of pie filling (used in pie irons for campfire pies while camping) in our pantry. I exclaimed "I know what we'll have for dessert!" That comment ALWAYS gets my family excited and this time was no different. I'm happy to say, it was a success and I thought I'd share it here for you.

Fruit Enchiladas

Ingredients:
1 can pie filling (apple, blueberry or cherry...any will work)
6-12 (8-inch) flour tortillas
cinnamon (I just use my cinnamon & sugar shaker)
1/3C butter or margarine
1/2C sugar
1/2C brown sugar (packed)
1/2C water

Directions:
Spoon fruit filling evenly down the center of each tortilla. Sprinkle with cinnamon (whatever you think looks good). Roll up and place seam side dowm in a lightly greased baking dish (8x8 will work for 6-8, 9x13 if you make more). Bring butter, sugars and water to a boil in a medium saucepan. TReduce heat and simmer, stirring constantly, for 3 minutes. Pour over enchiladas. Sprinkle with more cinnamon if you like. Bake (I cover the pan with foil) at 350 degrees for 20 minutes. Is awesome with ice cream!

Now, for those of you who like to go really homemade, I see no reason you couldn't make your own tortillas or pie filling!

Sadly, I have no picture of it because it was gone almost as soon as it was served!

Good things come in 3's!

As you may know, I've had a few recent milestones with Cobb Cabin Crafts and I think it's time to celebrate that! I took a huge leap of faith in 2010 when I started Cobb Cabin Crafts and many thought I was crazy for making and selling small animal accessories. Those same people thought I should stick to making baby items and knitting. Needless to say, those same people willingly admit they were wrong. I love my family!

So, we are going to celebrate in three different ways.

1. All purchases between April 1 and April 10 can recieve a 15% discount with the code MILESTONE.

2. We will be giving away random accessories all through the month of April. I have a few items that need new homes (think licensed prints that I cannot sell)and a few lucky customers will be receiving unexpected gifts. Lucky customers will be chosen at random.

3. The big giveaway will be a matching set. One person will receive a cuddle cup, burrow bag, and tent. All you need to do to enter the give away is email me at CobbCabinCrafts@yahoo.com by April 15 and tell me your favorite Cobb Cabin Craft item. You can include a picture if you like (I will only use it on my blog/Facebook page with your permission). The winner will be chosen at random.

My very first facebook contest

As November is a special month here at the Cobb Cabin (being Mr.'s and my wedding anniversary), we thought we would have our very first facebook contest. We chatted a bit and decided to keep it simple.
All you need to do to enter is upload a picture onto the Cobb Cabin Craft's Facebook page.

It can be a picture of one of my products being modeled. Such as this:


Or if you don't have anything from Cobb Cabin Crafts yet, you could use a picture of a wishful model.

Of course, I don't want to leave my handknit fans out! If you want to enter with a picture of some awesome handknit socks (or some cold feet) feel free to join the fun!

The prizes will be picked at random on November 14th. That's not exactly our anniversary, but it's close.  Currently the prizes include a pair of handknit felted mittens, a small animal tent, or $20 shop credit.
